I want my installer to only offer repair and remove when doing maintenance, and to hide the modify available options. Is there an easy way to accomplish this?

In the dialog editor for that dialog, you can just the the enabled property to false for that radio button. This way it won't show up. This is real easy.

You can also just delete those controls permanently, or hide them. You can customize every aspect of your dialogs in InstallAware!
