Is there somewhere a "complete Documentation" about the properties of the Dialog-Editor and Components?

Is, there is. If you were to refer to me signature, you can click F1 when your inside the Forms Editor and you will get to the correct section of the documentation.

If it is so easy then tell me please as an example where i have to Press F1 to receive the information
about

Button on a Dialog
set Perform action to "Select Custom Folder"

Where will the Information of the folder selection from the User be written?

I dont find anything in the help
