Our software is a plugin to Autodesk products. Hence our installer doesn't create any shortcuts really. So I deleted the Uninstall one because we don't need that.
However we do need the auto-updater to have an icon, but as soon as I deleted the uninstall icon, we now get an error on install run that the updater shortcut cannot be created.
How do I fix this? (I can't find a way in the UI to add back the creation of the uninstall icon either)

honestly I am not quite sure to follow your description of the problem.
At any rate and if I haven't missed anything, probably you missed to delete a shortcut which probably uses such icon. If this is true, verify if the shortcut has been effectively deleted and if the case delete it.
